Chicken Broth

A basic broth gets you started on a lot of great dishes. Borrowed from David, of course.

water and/or canned broth
chicken bones, a left over carcass is best
3 parts onion
2 parts carrots
1 part celery
bay leaf
tyme

NO SALT! Simmer, do not boil 2 to 4 hours, plus or minus. Remove everything except the liquid, skim off fat. Can be refrigerated.
